Healthy lifestyle – roasted chicken crockpot style!



Here goes nothing! This morning I need to get a chicken going for tonight's dinner, but the middle of the day is pretty busy and I don't want to be thinking about this after Christians therapy because I'm usually shot by then. That's a surefire recipe for driving through for dinner, which we really don't want! I haven't really decided what to use the chicken for yet, but it's sure to be a very juicy specimen. I read through several ideas for crockpot chicken on Pinterest, and blended some ideas I found with my on spice blend and my personal tip: cook your chicken breast side down! Gasp! Heresy! But the reviews don't lie, I have been doing my turkey and my chicken like this for a few years now and I am telling you – it comes out with the juiciest chicken breast ever! Turkey breast, too. I will update this blog post after it is done, but for now here are the steps that I followed:

Thaw one frozen large whole chicken overnight, Or better yet, use a fresh chicken!

Remove innards, rinse and pat dry.

Place a 2 – foot length of foil in crockpot.

Place chicken breast side up into crockpot, and doused with your favorite spices. I used garlic powder, no salt seasoning from Costco, and smoked Paprika. Flip the chicken onto its breast, and repeat with seasonings on the underside. I am very generous with my spices, because we do remove the skin and this causes The flavore to permeate the chicken. You could put it under the skin but that's a lot of work LOL

Fold foil over chicken, cover, and cook on low for four hours.

When the four hours is over, I will probably leave it on warm til 20 mins before dinner, when I will brown it under the broiler.

Mmmmm....My house smells wonderful! We are going to break this chicken down and use it for salad, tacos, and gluten free pizza. Yay!
